Ingredients

  • 1 quart chopped cabbage (about 1 small head)
  • 3 cups chopped cauliflower (about 1 medium head)
  • 2 cups chopped green tomatoes (about 4 medium)
  • 2 cups chopped onions
  • 2 cups chopped sweet green peppers
  • 1 cup chopped sweet red peppers
  • 3 tablespoons salt
  • cups distilled white vinegar
  • cups sugar
  • 2 teaspoons celery seed
  • 2 teaspoons dry mustard
  • 1 teaspoon mustard seed
  • 1 teaspoon turmeric
  • ½ teaspoon ground ginger

Method

  • Combine the chopped vegetables and sprinkle with salt. Let stand 4 to 6 hours in a cool place. Drain well.
  • In a saucepan, combine the vinegar, sugar, and spices and simmer 10 minutes. Add the vegetables and simmer 10 minutes more. Bring to the boil.
  • Pack, boiling hot, into hot pint jars, leaving ¼-inch headspace. Adjust the caps. Process 10 minutes in a boiling-water bath.
