  • ¼ cup wine vinegar
  • 2 teaspoons Dijon or other imported mustard
  • 2 teaspoons finely chopped garlic
  • 1 teaspoon paprika
  • Salt to taste, if desired
  • Freshly ground pepper to taste
  • 1 cup olive oil


  1. Put the vinegar, mustard, garlic, paprika, salt, and pepper in a mixing bowl.
  2. Gradually add the oil, beating rapidly with a wire whisk. Stir this sauce vigorously prior to each use.
