A sformato is a classic steamed pudding much beloved by Italian Jewish cooks as it makes a festive and elegant dish out of a few simple and inexpensive ingredients. This recipe is from La cucina nella tradizione ebraica. You can serve it from the baking dish in the manner of a soufflé or, more traditionally, unmold (sformare) it and accompany with sautéed mushrooms or with a light Tomato Sauce.
