  1. Make a small fire with dry twigs and leaves. When it has caught properly add a few pieces of damper slightly mossy wood to damp the fire and make it smoke.
  2. Put the unsalted meat on the grill and hold over the fire for 7 minutes on each side; this is not to grill the meat but to let it absorb the flavours of the woodsmoke. Remove and put on a plate.
