  • 110 g (4 oz) of the palest chicken livers
  • 1 small egg

Method

  1. Clean the livers, removing any strings or greenish parts.
  2. Blend them in the liquidiser together with salt, pepper, nutmeg, garlic, beaten egg, the truffle juice (if used), and the skimmed milk powder dissolved in water, then add the chopped parsley.
  3. Preheat the oven to 220°
