  • 250 g (9 oz) strawberries
  • 1 tablespoon kirsch

Method

  1. Hull the strawberries and put them in a china bowl with the kirsch. Put to macerate in the refrigerator.
  2. Put the egg whites and the sugar substitute, pounded to a powder if necessary, in a large bowl. Place the bowl over a pan of just simmering water and whisk for ten minutes. The mixture will whiten, thicken and then become stiff. Put this meringue in the refr
