Ingredients

  • 2 tablespoons olive oil
  • ½ cup chopped lean salt pork
  • ½ o

Method

Heat the olive oil in a large frying pan and sauté the salt pork for a few minutes. Add the onion and cook for 5 minutes. In a bowl, mix together the beaten eggs, spinach, cheese, parsley, nutmeg, and salt and pepper. Pour the mixture on top of the onions and salt pork.
