“Cover capon with paper and sew edges, ” the recipe mentions; “while baking it, keep it far away from the fire so as not to burn the paper.” (This probably came from the Italian kitchen, which invented the technique, at least in Europe. There is a strong possibility that it originally came from China, via Marco Polo, since the Chinese had used this technique for at least 2, 000 years.)
