Method

“Cook crab until half done. Remove meat and mash it in a mortar. Pour milk onto it, add two raw eggs. Mix it well and drain excess liquid, if any. Boil or steam this mixture. When cooked, take out with slotted spoon and drain it well. Mix it with a little honey and cinnamon, and chopped fresh grapes. Tie it in a clean cloth and let it drip, as when you make cream cheese. When concentrated, take it out of cloth, cut it into finger-size pieces and grill it with a little oil. Serve it with a sauce made of white wine, honey, saffron, ginger, pepper, chopped grapes.”
