Fresh Dill Soup

  • 2 tablespoons butter
  • 1 tablespoon flour
  • 2 tablespoons minced dill
  • Salt
  • ½ cup sour cream
  • 1 tablespoon lemon juice


  1. Make a roux with the butter and flour, and slowly cook it till golden brown.
  2. Add dill, stir it well, and immediately pour in ½ cup cold water and whip till smooth. Add cups water and salt to taste, and cook the soup for about 10 minutes.
  3. Mix sour cream with lemon juice and put in the soup tureen. (Eliminate lemon juice if the soup is too sour for your taste.) Pour soup over.
  4. Serve with Potato Dumplings. Cook these dumplings in the fresh dill soup for 5 minutes.
