Gooseberry Soup



  • 1 pound gooseberries, cleaned (no stems)
  • ¼ to ½ cup sugar
  • 2 thin round slices of lemon
  • ½ cup sweet white wine
  • ½ cup sour cream
  • 1 tablespoon flour


  1. Cook gooseberries with sugar and lemon slices in 5 cups water and the wine until berries are done. Depending on the age of the fruit, this can take from 10 to 30 minutes.
  2. Meantime, mix sour cream and flour. Add a ladleful of the hot broth and whip the mixture to a smooth paste.
  3. Pour the paste into the cooked fruit and liquid. Turn off heat but let the soup stand for a few minutes before serving.
