Little Pockets Filled with Calf’s Lung

  1. Make a dough out of the flour, 1 egg, ¼ cup water and the salt. Knead, then let the dough rest for 10 minutes.
  2. Stretch dough into a thin sheet and cut into halves.
  3. On half of the dough place teaspoons of the filling, at intervals of inches, in the same way you would make ravioli. Brush the spaces in between the mounds of filling with the egg wash.
  4. Gently place the other half of the dough on top and push down in the spaces around the filling. Cut around the mounds of filling with a ravioli cutter. The little squares should be quite even.
  5. Place pockets in salted boiling water and cook for about 5 minutes. Do not put too many in the water at once because they will stick together. For a more refined taste, boil them in a meat broth.
