Mix the flour and half of the butter till the mixture forms crumbs. Add half of the cheese, 2tablespoons of the sour cream, the paprika and a little salt. Knead dough well, then let it rest in the refrigerator for a couple of hours.
Preheat the oven to 350°F. Stretch the dough to a sheet ¼inch thick. Cut pieces with a small round cookie cutter.
Bake the rounds in the preheated oven for 12 to 15 minutes.
Mix remaining butter, cheese and sour cream and spread a ¼-inch layer on the cooled biscuits. Place a second biscuit on top, making little sandwiches out of them.
