Hot Cheese Crackers

  • ¾ cup flour
  • ½ pound lightly salted butter
  • ½ pound Swiss cheese, grated
  • 3 tablespoons sour cream
  • ½ teaspoon paprika
  • Salt


  1. Mix the flour and half of the butter till the mixture forms crumbs. Add half of the cheese, 2 tablespoons of the sour cream, the paprika and a little salt. Knead dough well, then let it rest in the refrigerator for a couple of hours.
  2. Preheat the oven to 350°F. Stretch the dough to a sheet ¼ inch thick. Cut pieces with a small round cookie cutter.
  3. Bake the rounds in the preheated oven for 12 to 15 minutes.
  4. Mix remaining butter, cheese and sour cream and spread a ¼-inch layer on the cooled biscuits. Place a second biscuit on top, making little sandwiches out of them.
