Little Ham Crescents

Ingredients

  • Puff Pastry
  • ½ cup ground boiled ham
  • 1 whole egg
  • 1 tablespoon sour cream
  • Pinch of white pepper
  • Few tarragon leaves, chopped
  • 1 egg yolk, beaten

Method

  1. Preheat oven to 400°F. Stretch finished puff pastry to a very thin sheet. Cut into 4-inch squares.
  2. Mix ham, whole egg, sour cream, pepper and tarragon.
  3. Put ½ teaspoon on one corner of each square. Roll up each filled square like a crescent; bend the ends slightly. Brush tops with beaten egg yolk.
  4. Bake for 12 to 15 minutes, until light brown in color. Serve as a hot hors d’oeuvre or to accompany soup.
