Ingredients

  • cups milk
  • 2 tablespoons butter
  • ¾ cup farina Salt
  • 1 cup freshly grated Parmesan cheese
  • 3 eggs
  • 2 cups vegetable or flower-seed oil for frying

Method

  1. Mix together the milk, butter, farina and a pinch of salt. Cook for 3 minutes.
  2. Remove from heat and mix in half of the grated cheese. Let the mixture cool for 10 minutes.
  3. Add eggs, one by one, beating after each addition.
  4. Butter a baking sheet and pour the mass on top of it, spreading it to ½-inch thickness.
  5. Cut it to any shape you desire; often the batter is cut into 2-inch rounds.
  6. Put oil in a deep fryer; when it is smoking, reduce heat and start frying the little doughnuts. If you put in too many at one time, they will stick together. Fry them for 1 or 2 minutes on each side, until golden brown.
  7. Remove doughnuts from the pan with a slotted spoon, and place them on a double layer of paper towels to drain.
  8. Dredge the little doughnuts with the rest of the grated cheese, and serve immediately.
