Ham in Winter Coat

  • 3 slices boiled ham, inch thick
  • ½ cup flour
  • 1 egg
  • ¼ cup milk
  • ¼ teaspoon salt
  • 1 cup lard or oil


  1. Cut each ham slice into halves, making 6 slices each about 4 inches square.
  2. Stir together flour, egg, milk, ¼ cup water and salt until you get a smooth mixture. Let the batter stand for 1 hour.
  3. Use the batter only just before you are ready to serve, and fry the slices only when guests are already seated. This must be served crisp and hot and just out of the fat.
  4. Heat the lard or oil to high temperature in a frying pan.
  5. Dip ham slices into batter and fry them over low heat, turning when golden brown and crispy.
