Smoked Goose-Breast Pudding

  • 4 tablespoons goose or chicken fat
  • 4 tablespoons flour
  • 8 eggs, separated
  • cups ground or fine chopped smoked goose breast
  • Fat for greasing mold
  • 2 tablespoons bread crumbs


  1. Mix fat, flour and cup water till smooth. Cook the mixture till it becomes a thick paste. Cool it.
  2. When cooled, mix paste with egg yolks, then add the ground goose breast.
  3. Whip the egg whites to a stiff foam and carefully fold into the first mixture, using a rubber spatula.
  4. Grease a pudding mold and sprinkle it with bread crumbs. Fill the mold with the mixture to about three quarters full. Put on a tight cover.
  5. Fill a 4 quart pot half full of water. Set pudding mold in the pot and cook for 1 hour. If by chance the water evaporates before pudding is done, add hot water to the water bath.
  6. When cooked, unmold the pudding to serve it.
