Ingredients

  • 4 pounds pork, not too lean
  • 3 garlic cloves, crushed
  • 2 tablespoons salt
  • 1 teaspoon black pepper
  • 1 tablespoon paprika
  • Pinch of ground cloves
  • 3 yards of sausage casing

Method

  1. Chop the pork into very small pieces, or grind through the large holes of a meat grinder.
  2. Mix in garlic, salt, pepper, paprika and cloves.
  3. Carefully wash the sausage casing. Fill with the ground mixture. Use a simple sausage-filling contraption, or the ¾-inch opening of a pastry tube. Tie the ends with string.
  4. Grease the bottom of a baking pan or casserole and place the whole sausage on this. Bake in a 350°F. oven until sausage is gleaming red.
