Piquant Hare Liver

  • ¼ cup hare fat or butter
  • Livers of 2 hares
  • Salt
  • Pinch of pepper
  • ¼ cup strong stock or broth
  • 2 teaspoons lemon juice


  1. Render the hare fat, or melt the butter.
  2. Put in the livers, and sprinkle them with salt and pepper. Cover the pot and cook livers on both sides for a few minutes.
  3. Drain off the pan juices and mix them with the stock and lemon juice.
  4. Put livers in a baking-serving platter and pour the liquid mixture over them. Bring to a boil, then serve immediately. Do not continue to boil because livers would toughen. Serve with White Bread Dumplings.
