Green Sauce

Zöld mártás


  • 4 or 5 hard-boiled eggs
  • 1 tablespoon prepared mustard
  • Juice of ½ lemon
  • 2 cups sour cream
  • 1 teaspoon paprika
  • Pinch of white pepper
  • 5 or 6 scallions, cut into small pieces, or the same amount of chives
  • 3 tablespoons minced flat parsley


  1. Separate the eggs. Place the yolks in a mixing bowl. Add mustard, lemon juice, sour cream, paprika and pepper. Mash with a fork till quite smooth.
  2. Add chopped scallions and parsley. Add fine-chopped egg whites. Mix well. Use just as you would use a mayonnaise.
