- 4 or 5 hard-boiled eggs
- 1 tablespoon prepared mustard
- Juice of ½
Method
- Separate the eggs. Place the yolks in a mixing bowl. Add mustard, lemon juice, sour cream, paprika and pepper. Mash with a fork till quite smooth.
- Add chopped scallions and parsley. Add fine-chopped egg whites. Mix well. Use just as you would use a mayonnaise.
