Leek Sauce



  • 2 white rolls with crust
  • 3 hard-boiled egg yolks
  • 4 leeks, cleaned and chopped fine
  • 1 cup mayonnaise
  • ½ cup sour cream
  • Juice of ½ lemon
  • 1 tablespoon sugar
  • 1 tablespoon salt


  1. Soak white rolls in lukewarm water for 5 minutes. Squeeze them, add hard-boiled egg yolks, and force both through a sieve.
  2. Cook cleaned chopped leeks in 1 cup water. Drain them and purée through a sieve or in a blender.
  3. Put the sieved roll and egg-yolk mixture in a mixing bowl. Add leek purée, mayonnaise, sour cream, lemon juice, sugar and salt. Mix well.
  4. Adjust salt, sugar and lemon juice to taste. Serve this cold sauce with fish, stuffed eggs, croquettes.
