Ingredients

  • pound butter
  • ¼ cup flour
  • 6 anchovy fillets, puréed
  • ½ small onion, grated
  • Handful of fine-chopped chives
  • cups beef stock or broth
  • 1 teaspoon lemon juice
  • Salt
  • ½ cup sour cream

Method

  1. Make a roux with the butter and flour, letting it brown but not burn. Add a little cold water and stir until smooth.
  2. Mix in puréed anchovies, grated onion and chopped chives. Add broth and cook the sauce over low heat for 20 minutes.
  3. Add lemon juice; add salt to taste. Just before serving, mix in sour cream.
