Ingredients

  • 1 pound flour
  • ½ pound sweet butter
  • 4 tablespoons granulated sugar
  • ½ teaspoon salt
  • 1 whole egg
  • 2 tablespoons sour cream
  • 1 extra egg yolk

Method

  1. Mix flour with butter until the mixture is crumbly. Sprinkle with sugar and salt and add the whole egg and the sour cream. Knead quickly, but don’t work on it for more than a few minutes.
  2. Roll out the dough on a floured board and fold it. Place it in the refrigerator for 30 minutes. Preheat oven to 400°F.
  3. Repeat the kneading, rolling, folding and resting process.
  4. Roll out the dough again, and cut out biscuits with a 1- or 2-inch biscuit cutter.
  5. With the point of a knife score the tops of the biscuits in a lattice pattern. Beat the egg yolk with 1 teaspoon water, and brush this glaze on the tops.
  6. Bake in the preheated oven for 20 minutes.
