Acacia or Squash-Flower or Elderberry-Flower Fritters

Bundázott Akác, Tök Vagy Bodzavirág


  • 8 to 10 clusters of elderberry flowers, or 2 dozen acacia or squash flowers
  • 4 eggs, separated
  • 2 cups flour
  • 2 cups white dessert wine
  • Pinch of salt
  • 1 tablespoon vegetable oil
  • 2 cups vegetable oil for frying
  • Vanilla sugar


  1. If you wash the flowers, do it gently, and dry them thoroughly. Leave a few of the flowerets to use without the coating.
  2. Mix egg yolks with flour, wine, salt and 1 tablespoon oil. Whip to a smooth batter, and let it stand for 1 hour.
  3. Whip egg whites till stiff and gently fold them into the batter.
  4. Dip the flowers into the batter and fry in the hot oil till golden brown. Remove with a slotted spoon.
  5. Dust the fritters with vanilla sugar. Put the uncooked flowers in the center of a serving platter, and place the fritters around them. Serve immediately.
