  • 8 to 10 clusters of elderberry flowers, or 2 dozen acacia or squash flowers
  • 4 eggs

Method

  1. If you wash the flowers, do it gently, and dry them thoroughly. Leave a few of the flowerets to use without the coating.
  2. Mix egg yolks with flour, wine, salt and 1 tablespoon oil. Whip to a smooth batter, and let it stand for 1 hour.
