Peel and core the apples. Put the butter in a heavy saucepan. When it is melted, add the apples and sprinkle with granulated sugar. Cook, covered, over very low heat; stir often.
When the apples are cooked, mix in 1tablespoon lemon juice and mash the apples with a fork, to make a spreadable but slightly lumpy sauce. Preheat oven to 300°F.
Make the pancakes. As each one finishes cooking on the second side, flip it out into a buttered deep baking dish (round heatproof glass is good). Spread each one with some of the applesauce. Continue this way till pancakes and sauce are used. Leave the last pancake top plain.
Make a meringue: Whip the egg whites, confectioners’ sugar and ½teaspoon lemon juice till the mixture forms peaks.
Spread the meringue on top of the pancakes. Bake in the preheated oven for 15 minutes, or until golden brown.
