My Mother’s Cherry Cake

  • 1 pound fresh cherries
  • pound sweet butter
  • ¾ cup granulated sugar
  • 3 eggs, separated
  • 1 cup flour
  • Pinch of salt
  • ¼ cup bread crumbs
  • Vanilla sugar


  1. Pit cherries, taking care not to split them. Set aside. Preheat oven to 375°F.
  2. Mix butter well with half of the granulated sugar. After a few minutes of vigorous whipping add egg yolks and continue whipping. Finally add flour and salt.
  3. Beat egg whites with remaining granulated sugar till the mixture is stiff and forms peaks. With a rubber spatuja, gently fold it into the butter mixture.
  4. Butter a baking pan 10 by 6 inches and sprinkle it with bread crumbs. Put dough in pan, and top with cherries.
  5. Bake in the preheated oven for 30 minutes. Before serving, sprinkle with vanilla sugar.
