Latticed Chocolate Pite

Rácsos Csokoládés Pite


  • ½ pound plus 4 tablespoons butter
  • pounds flour
  • cups powdered sugar
  • Pinch of salt
  • Grated rind and juice of 1 lemon
  • 4 eggs, separated


  1. Preheat oven to 350°F. Mix butter and flour until they form crumbs. Then mix in the powdered sugar, salt, lemon rind, lemon juice and 4 egg yolks.
  2. Take two thirds of the dough and pat it down on the bottom of a baking sheet 8 by 10 inches. Make sure that the sides are covered also. Bake in the preheated oven for 10 minutes. Set aside to cool.
  3. Make the filling: Make a very stiff froth with egg whites and granulated sugar, then very gently, so as not to break the froth, mix in almonds and chocolate. Add vanilla bean.
  4. Spread jam on top of the cooled half-baked dough. Spread filling on top of jam.
  5. Roll out the rest of the dough into a thin sheet and cut into thin strips. Form crisscross, diamond-shaped latticework on top of the filling for a traditional topping.
  6. Beat remaining egg yolk with 1 teaspoon water. Brush latticework with this egg-yolk glaze. Return the pan to the oven for an additional 30 to 35 minutes, or until it is properly baked.
