Latticed Cheese Squares

Túrós Rácsos (also known as túrós pite or túrós lepény)


  • cups plus 2 tablespoons flour
  • pound butter
  • 2 egg yolks
  • cup granulated sugar
  • ½ teaspoon baking powder
  • Grated rind of ½ lemon
  • Pinch of salt
  • tablespoons sour cream
  • 2 whole eggs, separated
  • ½ pound pot cheese
  • ½ cup vanilla sugar
  • 1 tablespoon lemon juice
  • Flour for pastry board
  • 1 whole egg, beaten


  1. Preheat the oven to 375°F. Place cups flour in a large mixing bowl. Cut cold butter into it and mix to crumbs with a pastry blender. It will take about 2 minutes working fast.
  2. Add 2 egg yolks, granulated sugar, baking powder, lemon rind, salt and sour cream. Once more mix fast with pastry blender.
  3. Now dip your hands into ice water and dry them. Mix the dough well with your hands, but for no more than 30 seconds.
  4. Place three quarters of the dough in a 9-inch-square baking pan. Pat it evenly. Bake in the preheated oven for 10 minutes.
  5. Make the cheese filling: Beat egg whites very stiff; set aside.
  6. Push pot cheese through a sieve, then add egg yolks, vanilla sugar, 2 tablespoons flour and lemon juice. Finally fold in the stiff egg whites.
  7. Spread the filling evenly on the partly baked dough.
  8. Flour the table with your hands. Roll out remaining quarter of dough and cut into thin strips. Place strips in latticework position on top of filling.
  9. Beat remaining whole egg with 1 teaspoon water, and brush latticework strips with this egg wash. Bake the cake for 30 minutes longer.
  10. When it is cool cut it into 2-inch squares.
