Stefánia Torta


  • 7 eggs, separated
  • Pinch of salt
  • ½ cup plus 2 tablespoons sugar
  • ½ cup plus 1 tablespoon flour
  • Butter
  • Flour
  • Chocolate-Cream Filling I
  • 1 tablespoon powdered cocoa


  1. Preheat oven to 375°F. Whip the egg whites with 1 tablespoon water and a pinch of salt to a very stiff foam.
  2. Add egg yolks, one by one, and beat for an additional 3 minutes.
  3. Add ½ cup sugar, spoon by spoon, and beat for 3 or 4 minutes longer.
  4. Finally slowly stir in the flour till the mixture is smooth.
  5. Cover a baking sheet 17 by 12 inches with wax paper and butter the paper. Sprinkle lightly with flour. Shake off any excess.
  6. Pour in the batter, and bake in the preheated oven for 18 to 20 minutes, or until golden brown.
  7. Cool the torte, and cut it lengthwise into 3 pieces. Spread layers with filling and put together. Spread more of the filling smoothly on top and sides.
  8. Mix cocoa and remaining 2 tablespoons sugar in a fine sieve, and sprinkle over the top of the torte. Serve chilled.
