Mocha Filling II

Ingredients

  • ½ cup sugar
  • ¼ cup prepared very strong espresso coffee
  • ¼ pound semisweet chocolate, softened
  • pound butter
  • 6 egg yolks

Method

  1. Cook sugar with coffee until syrupy, 3 to 4 minutes. Let it cool.
  2. Mix in the softened chocolate and butter. While constantly stirring, add the egg yolks, one by one, and keep stirring until the filling thickens. Cool.
