  • 1 cup flour
  • ¼ pound plus 1 tablespoon butter
  • tablespoons vanilla sugar
  • 2 egg yolks
  • Pinch of salt
  • 1 egg white
  • 4 tablespoons confectioners’ sugar
  • ½ tablespoon lemon juice
  • ¼ cup peach or other jam


  1. Preheat oven to 350°F. Using 2 knives, work together thoroughly the flour and butter. Add vanilla sugar, egg yolks and salt. Knead well but quickly.
  2. Put the dough between 2 sheets of wax paper and roll it to ¼-inch thickness.
  3. Punch out cookies with a 2-inch cutter. Punch out the centers of half of these rounds with a 1-inch cutter. Place them on a baking sheet and bake for 15 minutes.
  4. Make a meringue: Whip the egg white till stiff, then mix with confectioners’ sugar and lemon juice.
  5. Spread the meringue on top of the rounds and also the rings. Place them in the warm oven, turn the heat off and bake (or almost dry) them for 30 minutes. The meringue must remain snow white. Cool.
  6. When cooled, spread jam on the sides without meringue. Put them together, making little sandwiches with the meringue glaze on both outer sides, with jam showing in the center of one.
