Ingredients

  • ½ pound butter
  • ½ pound flour
  • ½ tablespoon vinegar
  • ½ tablespoon salt

Method

  1. Knead butter with 2 tablespoons flour for about 1 minute. Set aside 2 tablespoons of this, and roll the rest in wax paper. Store in the refrigerator.
  2. Take the 2 tablespoons of the mixture and mix it into the rest of the flour. Knead together with the vinegar, salt and ¾ cup water for 5 to 6 minutes, until you get a smooth, silky dough.
  3. Shape the dough into a round and cut 3 or 4 incisions on top. Cover the dough with a cloth, and let it stand on the kneading board for 30 minutes.
  4. Roll out the dough into a sheet 1 inch thick in the shape of a cross. Place the chilled butter from step 1 in the center of the dough. Fold over the dough flaps on all sides to cover the butter.
  5. With hands and rolling pin, pat and roll out the dough-wrapped block of butter until it is doubled in size. Roll it into an oblong approximately 24 by 8 inches.
  6. Fold the dough oblong in three, as if folding a letter to fit into an envelope.
  7. Turn dough upside down and stretch it again. Repeat the folding process. Let dough rest in the refrigerator for 1 hour.
  8. Repeat the stretching and folding, and let the dough rest again in the refrigerator.
  9. Ideally, use the dough the following day, but it is possible to keep it in the refrigerator for 2 to 3 days.
