Almond Roulade

  • 6 tablespoons butter
  • ½ cup granulated sugar
  • 1 tablespoon powdered cocoa
  • cups ground tea biscuits or plain cookies
  • 1 cup ground almonds
  • ½ cup chopped almonds
  • 3 tablespoons rum
  • ½ cup XXX powdered sugar


  1. Soften the butter and mix it with the granulated sugar, powdered cocoa, cookie crumbs, ground almonds, chopped almonds and rum.
  2. Roll the mixture in wax paper to the shape of a roulade, about 2 inches in diameter. Then roll it in the powdered sugar. Wrap in wax paper and store in the refrigerator until firm.
  3. When the roll is firm, slice it. Slice only as much as you will use, and store the rest in the refrigerator.
