For the rye bread

  • 120 g strong bread flour
  • 50 g rye flour, plus extra to sprinkle

Method

Step 1: Place the bread flour, rye flour, whole wheat flour, potato starch, salt and sugar in the bowl of a mixer fitted with the hook attachment. Add the water, leaven, yeast and butter and mix on low speed for 5 minutes. Increase the speed to high and continue to mix for 20 minutes. Once the gluten develops, (you will hear the air bubbles bursting), add the walnuts, figs and sunflower seeds.
