Step 1: For the brioche, add the milk, 40g of the sugar, lemon peel, cinnamon stick and vanilla seeds in a pan and bring to the boil. Remove from the heat and allow to cool completely. Whisk the eggs in a bowl and add the cream. Strain the cooled, infused milk into the egg mixture. Combine well and set aside.
