Step 1: For the cookie dough, cream the butter and sugars together in the bowl of a mixer fitted with the whisk attachment. Once light and fluffy, beat in the eggs. Sift in the flour and salt and add the vanilla paste and yeast. Once combined, stir through the chocolate chips and place the dough into a bowl. Cover and leave to rest in the fridge for 24 hours.
