Ingredients: 450 g/1 lb ready-to-roll fondant icing, white; gel or paste food colouring, yellow, red; 15-30 ml/1-2 tbsp lemon juice; writing icing, black, red; 115 g/4 oz/½ cup butter, softened; 115 g/4 oz/generous ½ cup caster (superfine) sugar; 75 g/3 oz/⅔ cup self-raising (self-rising) flour; 5 ml/1 tsp baking powder; 50 g/2 oz/½ cup ground almonds; finely grated rind of 1 lemon; 1.5 ml/¼ tsp almond extract; 2 eggs, lightly beaten; 5-10 ml/1-2 tsp lemon juice; 225 g/8 oz/2 cups icing (confectioners’) sugar, sifted; gold and red edible glitter

Almond and lemon cupcakes provide an appropriately Chinese flavour for this rather friendly dragon. Bake the cakes in shiny red or gold cupcake cases to add to the Chinese effect. Ten of the cakes form the body of the dragon with colourful scales, one cake has the dragon’s head and the other his tail. You can easily make the dragon bigger by extending the dragon’s body with more cupcakes.
