Fried Onion Paste is a key ingredient in many curries from the northern regions of India and Pakistan. It provides a smooth, sweet, dark brown base that mellows out the harsh flavors of ginger and garlic, two other common items in those curries. You can use yellow or white onions, but the red ones are it in classic Indian cooking.
