Silky-thick yogurt is made by separating as much of the whey from the curds as possible to create a thickened product that has the consistency of smooth whipped butter. Thick yogurt provides great texture to some curries, especially when meats marinate in it before stewing. Some Greek and Middle Eastern grocery stores stock thick yogurt (also called “yogurt cheese”), because it is widely used in many of their sauces and dips.
