Fresh curry leaves provide a mildly citruslike flavor and give off an intense aroma, especially when you rub a leaf between your fingertips and smell your fingers. Fresh leaves are found in the refrigerated section of Indian grocery stores and are quite inexpensive. The leaves come off the sprig very easily when you slide your fingers down the stem, moving in the opposite direction of the upward-growing leaves.
