The 1970s witnessed the popularity of disco music here in the United States, but in the streets of Mumbai (then called Bombay), a much spicier melody swept through the metropolis. Street vendors hawked an unusual combination of simple vegetables, slow-roasted with an abundance of butter and spices and served them with browned slices of soft white bread. Disco fever may have down-spiked after a few years, but not this addictive curry, which still soars in many a Mumbaiite’s heart.
