Egg curries like this are a cinch to make. Around Easter, I find an abundant supply of hard-cooked eggs lying around our house. Gently simmering the cooked eggs in a robust onion-tomato sauce makes for a delicious quick lunch, especially when accompanied by slices of buttered toast. I particularly enjoy dunking the crusty pieces into the sauce before I devour them.
