In the Midwest, turnip greens seem to be available only in the summer months, so I make it a point to buy copious amounts when I see them. I love their mellow bitterness, high nutritional value, and ease of cooking, and find them a perfect match for strong-tasting lamb. (I have also made this curry with beef, with equally satisfying results.) Even though turnip greens are not classic to the western region of India (they are much sought after in Kashmir, however), I think the Kolhapuri spice, with its coconut, assertive spices, and chiles, is a tasty choice.
