Surprisingly, this curry is sweet—with of course a strong hint of zing coming from the red chiles in the masala. If the kick isn’t enough for your adventurous palate, use an additional tablespoon or more of the masala—that will surely make you break into a capsaicin-sweat. Serve the curry over a plate of starchy rice to soak up the sauce and spice.
