My version of this classic from the Konkan community of Goa is not as fiery as the ones I sampled during a recent visit. If you do prefer the authentic heat, up the ante by doubling the amount of chiles, both fresh and dried. Note how the coconut makes its presence known in two different ways, as it eloquently layers the flavors of nutty and creamy: First, the nuttiness comes from the dried form of fresh coconut shreds, toasted reddish brown and used more as a spice to provide flavor.
