I used to cook a version of this curry during my five-year stint at a north Indian restaurant in the United States, an arduous life I’d just as soon forget. Standing on my feet twelve hours a day behind a hot commercial stove got dreadfully old very quickly. When the days got long and tiresome and next day’s lunch buffet had to be prepped, this pork dish met all my requirements (quick, hassle-free, and inexpensive) and my customers’ needs (tasty, robust, familiar, and cheap) within minutes.
