Salmon is not native to India, even though the subcontinent is cupped by three large bodies of water that school many a variety of fish and shellfish, but it works well with the subtle flavorings in this curry (I hate to mask salmon with assertive spices). This creamy yellow curry with a delicate taste offers a stunning-looking backdrop for the saffron-hued fish.
