The lime juice in this curry provides a clean tartness when compared with the more complex, earthy tamarind—the latter often being the souring agent of choice in southern India. Farm-raised tilapia is a mellow-tasting fish and its fillets are very thin. It’s easy to overcook them, so do take extra precaution while you fry or poach them.


  • Juice of 1 large lime

  1. Stir the lime juice and turmeric together in a small bowl. Lay the tilapia fillets in a single layer in a shallow platter. Pour the yellow-stained lime juice over them, and lift them to allow the juice to run under and coat the underside.
