If you make the spice blend ahead of time (which takes barely 5 minutes, by the way), this curry could not be any easier. Prep is next to nothing, especially if you purchase already peeled and deveined shrimp, and you know the cooking time is minimal because you don’t want to over-cook this delicate shellfish. Just a few minutes at the stove and you get to savor the curry’s nutty, hot, and citrus undertones.
