When my students, especially those who approach spices with trepidation, ask me to show them a “really simple” curry, I put this together while they watch in total amazement at the minimalism of it all. Even the garam masala, one of the recipe’s components, consists of only three spices. Once they whet their appetite this way, the students are often ready to graduate to the next level, much to my satisfaction.
